Erythritol is a polyol (sugar alcohol) that occurs naturally in fruits such as pears, melons, and grapes, as well as in other foods such as mushrooms, wine, soy sauce, and cheese. Erythritol is a white crystalline powder with a sweet and pure taste similar to that of sucrose. Erythritol is about 70% sweeter than sucrose. Because it is not hygroscopic, it has good fluidity in chemical books. Erythritol has a caloric value of 0 calories/gram, and its high digestibility differentiates it from other polyols. Erythritol is rapidly absorbed from the small intestine and rapidly digested by the body within 24 hours, so the laxative side effects of excessive intake of polyols are unlikely to occur when consuming erythritol.
